Jalapeno Cheddar Tater Tots Recipe

We have been eating so many tater tots perfecting this recipe!

Jalapeno Cheddar Tater Tots

~1 lb cooked russet potatoes (about 3 medium potatoes)
4 oz cream cheese
1/8 tsp garlic powder
1/2 C Parmesan cheese
1/2 C chopped jalapeno peppers
~ 5 cheddar cheese sticks chopped into 1/2 inch sections
1/2 C extra virgin olive oil
1 C crumbled potato chips (the thicker the chips are cut the better. Thin ones tend to get soggy. We recommend Kettle Brand in New York Cheddar. The chips used in the picture above are Pik-Nik Shoestring Potatoes.)

yield - about 30 tater tots
  1. Preheat oven to 400 degrees
  2. Mash potatoes with cream cheese.
  3. Add garlic powder and Parmesan cheese.
  4. Mix well and incorporate jalapeno peppers.
  5. Mold potato mixture around chopped cheese sticks into tater tot shape. (About an inch wide and and inch and a half tall.)
  6. Dip in a shallow bowl of extra virgin olive oil.
  7. Coat with crumbled potato chips.
  8. Place on baking sheet for 12 minutes.

dangit i just found out i spelt tater wrong! uggggghhhhhhhhhhh. i hope you like them sar! we spent about 4 weeks going through failed recipes. haha
